The Famous Woolworth Ice Box Cheesecake is one of the easiest ways to make a no-bake cheesecake at home.
This light and refreshing icebox dessert were made famous by Woolworth’s lunch counter back in the 1960s. Many people would have fond memories of their meals at Woolworth. Now you can make this easily at home! Originally it is a sweet and tart dessert, hence we are using lemon jello and lemon juice for similar flavor combinations. It is fluffy, light and has a balanced level of sweetness. You may also add vanilla extract or other flavors of your choice to this dessert. The graham crackers pack a buttery and nutty layer to this dessert and the cream cheese and jello combination is smooth and flavorful. This is going to be the crowd’s favorite part of the meal and you need to try it out this summer!

You will need :
1 (3 ounces) package lemon Jell-O
1 cup boiling water
8 ounces cream cheese, light
1 cup granulated sugar
4 Tablespoons lemon juice ( less if you don’t want to much lemon)
1 can Carnation Evaporated milk, well chilled
Graham crackers, crushed

Dissolve Jell-O in boiling water. Cool until slightly thickened.
Beat cream cheese, sugar and lemon juice with mixer until smooth. Add thickened Jell-O and beat well.
In a separate bowl, beat the Carnation milk until fluffy. Add cream cheese/Jell-O mixture and beat well with mixer.
line bottom of 9 x 13-pan with crushed Graham crackers.
Spread filling over and top with more crushed Graham crackers. Chill.
