Chocolate mousse: ingredients
Dark chocolate: 200 gr.
Sugar: 100 gr.
Butter: 50 gr.
Chocolate and candies to decorate: to taste.
The first step in making the mousse is to melt the chocolate. The best thing to do is to grate the chocolate first or cut it into small pieces. Then, you must place the pieces in a container suitable for fire and take it to a bain-marie until everything is well melted.
Then, add the butter and mix it until you have a uniform preparation. Once you've mixed everything, remove it from the heat and let it sit to cool.

Place the whites in a recent one. Whisk them to snow, to do so you can add a pinch of salt to make them take in air more easily. If you have never made this point before it may cost you a bit, but with practice and patience it is achieved. Do not be discouraged.
When you have the whites beaten to the point of snow, add them to the chocolate mixture. Do it slowly and smoothly, and with enveloping movements so that they do not come down. Mix it in such a way that you have a homogeneous preparation. Once you have achieved it, pour the preparation into individual containers and put it in the fridge for at least 4 hours to cool down well.
Before serving, you can decorate with some pieces of chocolate, sprinkles or the candies that you like the most.

White Chocolate Mousse
Another super-rich alternative is the white chocolate mousse. It is less frequent and that makes preparing it more original.
White chocolate: 200 gr.
Sugar: 200 gr.
Milk cream: 250 cc.
Egg yolk: 2 units.
The first thing you should do is slice or grate the white chocolate. The smaller you make it the faster it will melt. Once you have it ready, reserve it.
Take the eggs and separate the white from the yolk. The latter mix them together with the sugar until you have a homogeneous preparation.

On the other hand, in a pot, heat only one cup of heavy cream over low heat, the rest of the cream reserved. Once it's hot, slowly stir in the yolk and sugar mixture, mixing well so it doesn't stick or burn.
When it is hot, add the previously cut chocolate. Wait a few seconds and turn off the heat, since the same heat from the pot will make the chocolate melt completely. It is important that you let the preparation rest and cool well in order to continue with the next step. If you want to speed up the process, you can take it to the fridge.
