Madleans or mini cakes are perfect with coffee, for a cold winter day like this, when you have no choice but to sink into the soft, soft armchair with a book in your hand. What I wish you all, at least from time to time, because nothing can be more relaxing.
I don't have special shapes for Madeleine, but the muffin ones are just as good.
Ingredient:
3 eggs
300g old powder
250 ml oil
300 ml milk
lemon peel, a little lemon juice
500 g flour
half a teaspoon grated baking powder
half a teaspoon grated baking soda
chocolate for decoration
Eggs are mixed with powdered sugar, then milk. The milk must not be cold in the refrigerator. I used it at room temperature and it was ok. Then add in turn the oil, grated peel of a lemon, and baking powder with baking soda, quenched with a little lemon juice. (see here why I used both). Finally, I added flour and mixed the composition.
I poured the dough into molds and put them in the preheated oven at 180 degrees C. I'm ready when they look like the ones in the photo below.
I filled them and decorated them with chocolate cream for decoration, a delicious cream, made of real cocoa, with hazelnuts, perfect for fine decorations.
