Directions for Making Amish White Bread
Conventional method :
Mix the warm water and milk with the sugar in a large bowl.
Mix the yeast in.
Set aside for 5–10 minutes, or until the yeast mixture gets foamy.
Add 1 cup of flour and stir.
Salt and oil are added by whisking.
Add the rest of the flour, one cup at a time, while the mixer is running, until the dough pulls away from the bowl.
Knead by machine for about 5 minutes.
Hand kneading :
If you are kneading by hand, mix in the flour until you have a sticky dough. Turn the dough out onto a lightly floured surface and knead for 10 minutes or until the dough is smooth and elastic, adding flour as needed.
Rising and shaping :
Oil a large bowl and place the ball of dough in it.
Oil the top of the dough and then cover it with a damp cloth.
Let it rise until the size has doubled. Around an hour will pass throughout this.
Punch down the dough.
About three minutes of kneading should be used.
Let rest for five minutes.
Form the dough into loaves and put them in greased 9×5-inch loaf pans.
Use the melted butter to paint the tops.
Let the dough rise for 30 minutes or until it's about an inch above the pans.
Bake for 30 minutes at 350°F, or until the loaves sound hollow when you tap them.
For a soft crust :
For a soft crust, butter the tops of the loaves and put a clean tea towel over them as soon as they come out of the oven. Let them cool for about 5 minutes, then take them out of the pans and cover them back up with the tea towel so they can cool the rest of the way.
Bread machine instructions :
Follow the instructions that came with your bread machine to put the ingredients in.
Choose cycle white bread.
Press the “start” button.
Turn the machine off once the dough has doubled in size and the second cycle of kneading has started. To restart the device, press “start” once again.
Before baking, the dough will rise a second time.
Tips :
You can reduce the sugar by half if you want something less sweet. Although the texture will vary a little, it will still be fantastic.
I rarely use butter in recipes, but I do with this one. I use organic extra-virgin coconut oil since it gives the bread a tiny bit of flavor. Any mild vegetable oil will do. To discover which you like, try it with melted butter, light vegetable oil, or coconut oil. Before adding, make sure that the item has melted and has reached a temperature of 100F.
