Beef Soup With Vegetables is an excellent, cozy soup and a great way to use up any leftover vegetables in the fridge!
The tender chunks of protein-rich beef and abundance of nutritious vegetables make it perfectly hearty and filling. It's also a versatile recipe, so feel free to substitute other vegetables you may have on hand.
Beef Soup With Vegetables
After an hour on the stovetop, this soup has such a delicious rich flavor, and the beef is so tender. This is a wonderful fall and winter soup, but if you have a surplus of vegetables to use up in the summer, this is the recipe to try!

- Carrots
- Olive oil
- Beef stew meat
- Yellow onion
- Garlic
- Celery
- Dried herbs – basil, oregano, and thyme
- Canned tomatoes
- Low-sodium beef broth or chicken broth
- Red potatoes
- Salt and pepper
- Frozen corn and peas
- Green beans
- Fresh parsley
How to Make Vegetable Beef Soup :
- In a large pot, heat 1 tablespoon olive oil over medium-high heat.
- Dry the beef with paper towels, season with salt and pepper, and brown half of it in the pot for 4 minutes, turning halfway through.
- Place on a plate Repeat with the remaining half of the beef and another 1/2 tablespoon oil in the pot.
- Add another 1 tablespoon oil to the now-empty pot, then add the carrots, onions, and celery and sauté for 3 minutes before adding the garlic and cooking for 1 minute longer.
- Pour in the broth, tomatoes, browned beef, basil, oregano, and thyme, and season with salt and pepper. Bring to a boil, then reduce to a low heat, cover, and cook for 30 minutes, stirring once or twice.
- Cook, covered, for 20 minutes after adding the potatoes (you can also add green beans with potatoes if you like them very soft).
- Green beans should be added after 15 minutes of simmering, or until the beef and all the vegetables are tender.
- Add the corn and peas, then simmer for about 5 minutes, or until thoroughly heated. Serve warm after adding the parsley.

- 1 3/4 cup yellow onion, chopped (1 large)
- 1 1/4 cup carrots, peeled and chopped (3 medium)
- 1 cup celery, chopped (3 medium)
- 1 1/2 tablespoons minced garlic (4 cloves)
- 8 cups beef broth or chicken broth, low in sodium
- 2 cans diced tomatoes (14 oz.)
- 1/2 teaspoon dried basil
- 1 teaspoon dried oregano
- 1/2 teaspoon dried thyme
- 1 pound red or yellow potatoes cut into 3/4-inch cubes
- 1 1/2 cups (5 oz.) green beans, chopped (trim ends first)
- 1 1/2 cups frozen corn
- 1/3 cup fresh parsley, chopped
