This old school cafeteria pizza recipe embodies everything that was good about school cafeterias during our youth. (Caféteria ladies are omitted.)
If you miss the old school rectangle pizza and adore it, here is the recipe.
Line a half-sheet pan with parchment paper.
To make School Pizza you’ll need :
Crust:
2 ⅔ flour
1 tsp salt
2 T sugar
¾ cup powdered milk
1 packet of quick rise yeast
2 T vegetable oil
1 ⅔ cup warm water (105-110 degrees)
Filling:
½ pound ground chuck
½ tsp pepper
½ tsp salt
1 8oz block mozzarella cheese – grated yourself (To be authentic school pizza, you will have to use imitation mozzarella shreds.)
Sauce (I make sauce the day before):
6oz can tomato paste
1 tsp salt
⅓ olive oil
1 cup water
2 cloves garlic minced
1 tsp pepper
½ tbsp dried oregano
½ tbsp dried basil
½ tsp dried rosemary crushed
instructions :
Crust:
- Preheat oven to 475 degrees Fahrenheit. Spray pan with Pam and cover with parchment paper (Pam makes it stick) .
- In a large bowl, whisk together the flour, powdered milk, sugar, yeast, and salt.
- Pour hot (110-115 degree) water containing oil into your mixture.
- Stir with a wooden spoon until a batter forms; lumps are acceptable; you simply want no dry spots.
- Spread dough evenly in the pan using your fingertips. If dough is uncooperative, rest it for 5 minutes and try again.
- Remove the crust from the oven after 8 to 10 minutes and set aside.
- Meats are browned until they resemble crumbles – set meat aside and drain .
Bring out the pizza sauce and assemble the following ingredients on a partially baked crust:
- Sauce – spread all over crust
- Sprinkle meats
- Sprinkle cheese
- Bake at 475 degrees for 8 to 10 minutes, or until cheese begins to brown and melts.
- Remove from oven – let stand 5 minutes
- Cut in slices and serve!
